Skip The Meat, Put This On Your BBQ Instead

Now that the nice weather is finally upon us it’s time to fill up the tanks, hoard all the charcoal and dig out the matches…and light up your BBQ. It’s grilling season baby!

You can put pretty much anything on a grill, but that doesn’t mean it will be good. These recipes however…they’ll be good. Promise.

Let’s start with a couple of apps to rev up your taste buds. These mini grilled peppers in a minty tzatziki sauce are drool worthy.

INGREDIENTS

For the minty tzatziki:
¼ cup Greek yogurt
2 tablespoons chopped fresh mint
1 mini cucumber, finely grated and squeezed of all liquid (about 2 tablespoons)
1½ teaspoons freshly squeezed lemon juice
1 garlic clove, finely minced
⅛ teaspoon sea salt
For the mini peppers:
16 mini peppers
½ teaspoon olive oil
A pinch of sea salt and a few grinds of pepper

BBQ INSTRUCTIONS

Preheat your grill to medium high. Lay 8 wooden skewers on a plate with a little water.
Combine all the minty tzatziki ingredients together in a medium-sized bowl and mix well.
Toss the peppers with the olive oil, sea salt and pepper then slid the peppers onto the skewers, using 2 skewers for each row of peppers (so they don’t twirl around when you flip them).
Grill the peppers for 5 minutes, or until they’re soft and have nice grill marks on them, turning once.
Serve the grilled peppers right away with the minty tzatziki on the side. Note: Don’t worry about the seeds when you eat them. Just pick the pepper up by the stem and eat the whole thing (minus the stem).

In order to cook these bad boys without singeing off all your arm hair, you’ll want to get some nice long tongs. This solid utensil set should have everything you need.

What about a plethora of different veggies? This might seem counter intuitive to “but meat deserves to be on my BBQ!” Have faith, this could change your grilling game.

Using a grilling basket might be the way to go, that way you’re not sacrificing any to the bottom of your barbecue that you’ll be burning off over the next couple of weeks.

Let’s talk about dessert on the ole barbie. Yes, you can grill up some mean desserts. You can literally just toss some peaches on the grill, brown the up a little and serve with some vanilla ice cream. Sounds delicious already right? Why not slice them in half, grill them, then add some yummy cinnamon butter!

INGREDIENTS:

2 ripe peaches, halved and pitted
3 Tablespoons unsalted butter, room temperature
1 Tablespoon cinnamon sugar (or 2 tsp. sugar + 1 tsp. cinnamon)
Olive oil or canola oil

BBQ DIRECTIONS:

Slice peaches in half lengthwise and remove pits; set aside.

In a small bowl, mix butter and cinnamon sugar until well combined.

Heat a grill pan (or outdoor grill) to medium-high. Brush peaches with oil and grill cut-side-down until slightly softened and charred, a little over 1 minute. Compress gently with a spatula a few times for grill marks. Flip to rounded side and grill an additional minute.

Serve grilled peaches on individual plates. Top each with cinnamon-sugar butter, fresh basil or mint, and a scoop of vanilla ice cream or whipped cream.
